Hotel Pan Sizes Explained: Choose the Right Pan, Depth and Lid

“Half-size, four-inch deep” describes two different things: the pan's footprint and its depth. Both matter when replacing a steam table pan, setting up a buffet or organizing a prep station.

Before buying a stack of pans, identify the equipment they need to fit. Then choose the size, depth and matching accessories. A familiar size name is a starting point, not a guarantee that every pan and lid will work together.

What do hotel pan size fractions mean?

Full, half, third, quarter, sixth and ninth are footprint categories. They describe the pan's place within a larger pan layout; they do not tell you its depth or capacity in litres. A half-size pan can be shallow or deep.

The following dimensions are reference examples from Winco's 2026 steam table pan catalogue. Use them to understand the scale of each size, then check the drawing for your exact pan and equipment.

Pan size Approximate reference footprint (inches)
Full size 20¾ × 12¾
Half size 10⅜ × 12¾
Third size 6⅞ × 12¾
Sixth size 6⅞ × 6⁵⁄₁₆
Ninth size 6¾ × 4¼

Quarter-size and half-long pans are also available in some ranges. A half-long pan has a different shape from a standard half-size pan. Check actual measurements rather than ordering by the word “half” alone.

Start with the station you already have

For replacement pans, photograph the existing setup and record the equipment brand and model. If the old pan has an item number, keep that too. Measure across its outside rim and record its depth.

For a new layout, check the equipment manual for supported pan sizes, maximum depth and required supports. Smaller pans may need compatible adaptor bars to form a supported arrangement. Adding fractions together does not establish that the rims, rails and supports will fit.

This matters especially when moving pans between a steam table, a refrigerated prep rail and a storage rack. Confirm each intended use rather than assuming one pan fits every station.

Choose depth around your refill routine

EastFair's anti-jam stainless steel hotel pan range includes several size and depth combinations, with options varying by footprint. The Winco straight-sided steam pan range also includes shallow and deeper options.

Plan the amount you want at the station between refills. A deeper pan may hold more within the same footprint, but consider how much the filled pan will weigh, whether staff can reach the contents comfortably, and whether it clears the equipment below.

For example, a topping used slowly may be easier to manage in a smaller batch with planned refills. A busy station may need a different arrangement. Use your actual service pattern; pan depth alone does not tell you how many portions it holds.

Match the lid to the pan series

Check the brand, size and specified pan model before choosing a cover. Decide whether you need a solid cover or an opening for a serving utensil, and check whether the cover is sold separately.

Even within one brand, a size fraction may not identify the correct lid. Winco lists a standard ninth-size cover, SPSCN, and a separate SPSCN-GN cover specified for its SPJH-906GN pan. That is a good reason to keep the pan's item number with your reorder list.

What does “anti-jam” tell you?

Anti-jam describes a design intended to help nested pans separate during storage. It does not establish the correct equipment fit, lid pairing or temperature limits.

Choose the construction for your intended use and follow the exact product's care instructions. If a pan will go into an oven, freezer or other appliance, confirm that use with the manufacturer rather than assuming all metal or plastic food pans have the same limits.

A quick checklist before ordering

  • Equipment brand, model and supported pan layout
  • Pan footprint, depth and exact item number
  • Matching lid and any required adaptor bars
  • Quantity for service, refilling and washing
  • Manufacturer guidance for the intended use and cleaning
